Turkey & Courgette Meatball Pasta

Cooking time ~25 mins


This is a really quick, easy, healthy, summery meal. You can use Pork if the idea of Turkey mince isn't your thing. Lemon, Garlic and Parsley are the dominant flavours here and the Pomegranate works well to add some acidity.


 


 

Ingredients:


300g Turkey Mince

1x White Onion

3x Spring Onions

3x Garlic Cloves

30g Parsley

1x Courgette

1x Lemon

200g Spaghetti

Chilli Flakes

Parmesan

Pomegranate Seeds


 

Method:


Start by prepping the Veg. Separate your Parsley leaves and stalks and finely chop them both. Then finely slice the Onion, Spring Onion and Garlic.


Peel the outside of the Courgette into ribbons. These will go with your Pasta so set these aside. With the rest of the Courgette, grate it finely and put in a bowl. Also grate the zest of half of your Lemon and add to the Courgette bowl.


Fry off the Onion and Spring Onion in a pan with some Oil for a few minutes until softened. Then, add the Garlic and a generous amount of Salt, Pepper and Chilli Flakes.


Once you have a nice colour and everything has softened, add the mixture to the Courgette bowl along with the Lemon Zest, Turkey Mince, chopped Parsley stalks and some more seasoning. Mix well and form into balls. You don't want these balls to be too big otherwise they won't cook all the way through in a pan and you'll have to finish them in the oven (this is what I did and it was a complete faff).


Once you've mixed the Turkey into meatballs, set down on a chopping board and lightly dust some Flour over the top. Then, carefully fry the meatballs in a pan with some Oil, turning gently until you've got a golden caramelisation all round and you're confident they're cooked all the way through.


Get your Pasta on to cook as per instructions and make sure to save a bit of Pasta Water. When you have about a minute left on the Pasta, add the Courgette Ribbons to heat through.


Once the Pasta is done, drain and add to the cooked Meatballs with a splash of Pasta Water, the rest of the Chopped Parsley leaves, some Parmesan, the juice of your Lemon and some Black Pepper. Mix well until glossy.


Plate up and serve with some extra Parmesan, Lemon Zest and the Pomegranate Seeds.
