w/ Broccoli and Jasmine Rice

This is a BBC Good Food gem of a recipe and couldn't be simpler. Marinate the Chicken and then baste it with the sticky sauce as you cook over a BBQ. It's important to use Fillets as it means you can skewer them more evenly. If you can't find Gochujang then you can sub it out for 3 parts Ketchup, 1 part Sriracha.
Ingredients:
8x Chicken Thigh Fillets
4tbsp Soy Sauce
3tbsp Sesame Oil
Fresh Ginger
4tbsp Gochujang Paste (or 3tbsp Ketchup + 1tbsp Sriracha)
2tbsp Honey
1x Lime
Sesame Seeds
150g Tenderstem Broccoli
120g Sticky Jasmine Rice
Method:
Get your Rice on to cook as per packed instructions. It's good to let it cool down a bit before eating, especially if it's BBQ weather.
Finely chop Ginger and add about 3/4 of it to a bowl with the Chicken Thighs, 2tbsp Soy Sauce and 1tbsp Sesame Oil. Massage and get a nice coating. Marinate for as long as you like but if you don't have time that's no problem.
Repeat the same Marinade with the Broccoli - just use the rest of the Ginger with 1tbsp Soy Sauce and 1tbsp Sesame Oil.
The original recipe calls for you to use two metal skewers to BBQ your Chicken. Open each Chicken Thigh and pierce each side with one of the skewers so that each Thigh has two skewers in it (see below picture).
Make your Sticky Sauce by adding the Gochujang, 1tbsp Soy Sauce, 1tbsp Sesame Oil, Juice of 1/2 Lime, Honey, and about 1tsp Sesame Seeds. Give it a good mix until smooth.
Get the Chicken on the BBQ - you don't want an aggressive heat. Carefully give each side about 5 minutes (or longer) so that you get a nice char. It should look like this:
Chuck your Broccoli on and BBQ. We have one of those fancy silicone BBQ sheets which is a great investment, but straight on the grill is fine. These won't take long.
Once your Chicken looks like the picture above, start to apply the Sticky Sauce bit by bit. Carefully turn the Chicken and keep gradually applying. You want to cook the Chicken for about another 10 minutes or so, until it's cooked all the way through. Keep turning about every 2 minutes so that the Honey doesn't catch.
When it's ready it should look like this:
Plate up with the Rice and Broccoli and there you have it! Garnish with Fresh Coriander and Sesame Seeds if you're feeling boujee.
