Serves 4
Cooking time ~25 minutes
This is one of my go-to recipes from Jamie Oliver's 30 Minute Meals. It's super quick and easy and has such a depth of flavour. I didn't have Fennel Seeds like the original recipe suggests but just dialed up on Oregano instead.
Ingredients:
1x White Onion
1x Carrot
1x Stick of Celery
½ Red Chilli (deseeded and finely chopped)
4x Sausages
400g Penne
2tsp Dried Oregano
3x Garlic Cloves (finely chopped)
4tbsp Balsamic Vinegar
1tsp Caster Sugar
400g Chopped Tomatoes
Parmesan
Fresh Basil
Method:
Start with the Veg. Peel and chop your Onion, Carrot and Celery and add to a food processor/blender with the chopped Chilli. Blend well.
Add the Sausages. It's best to squeeze the Sausage meat out of the Sausages. This is fairly disgusting but necessary. Add the Sausage meat into the blended mixture with Oregano and and some Salt & Pepper. Keep blending this mixture until well mixed.
Get a large frying pan on the heat with a good amount of Olive Oil and add the mixture. Keep frying this until the Sausage mix has cooked through and starts to take on some colour.
Get your Pasta on to cook as per cooking instructions, remember to reserve half a cup of the Pasta Water.
While the Pasta cooks and when the Sausage mixture is cooked, add the Garlic, Balsamic Vinegar, Sugar and some more Salt & Pepper to the pan. Add the Tomatoes too and mix well.
Leave this to simmer until your Pasta is cooked. Once it is, drain the Pasta (reserving some liquid).
Add the Pasta to the Sauce and toss well, loosening up with some Pasta Water. Stir some Parmesan through and leave some for serving.
Plate up with some Fresh Basil and more Salt & Pepper!
