Quick and Easy Cheese & Onion Tarts

Cooking Time ~30 minutes


These are super simple if you fancy a snack. Any ingredient can be switched for any ingredient:


Garlic Mushrooms & Philadelphia; Asparagus & Parmesan; Beetroot and Goats Cheese all work really well.

 


 

Ingredients


1x Jus-Roll Puff Pastry Sheet

2x Red Onions

1x Red Chilli

Handful of Cherry Tomatoes

Blue Cheese / Cheddar / Goats Cheese

Brown Sugar

1x Egg (beaten)


 

Method


Preheat your oven to 200ºc.


Slice your Onions and add them to a pan with some Oil and a little (lot of) Butter. You want a low/medium heat as it's best to sweat these down slowly to bring the sweetness out.


Once the Onions start to take on some colour, add a few tbsp of Brown Sugar, a generous amount of Salt and Pepper and the chopped Red Chilli.


Cook the Onions down for around 15 minutes or until they are nice and caramelised.


Roll the Puff Pastry out onto a chopping board and divide into 8 equal pieces. Place some baking paper on a baking sheet(s) (or just lightly spread some Butter across it - this works just as well) and lay the 8 pieces onto the sheet(s).


Score your Pastry carefully with a knife around an inch from each edge so that you're left with a rectangular box within your Pastry piece.


I like to add a drop of Hot Sauce on the bottom of these to give them an extra kick but whatever floats your boat.


Layer the Onions into the middle of the pieces of Pastry - you want to leave that gap around the edges for the Puff Pastry to rise. Onto the Onions place your Cheese, and then some Cherry Tomatoes.


Once you've beaten your Egg, brush the mixture across the edges of the Pastry - this will help them rise and brown nicely.


Give the Tarts one final seasoning with Salt and Pepper and pop them in the oven for around 15 minutes or until they are golden brown.





Once they're done, take them out and let them cool down for a couple of minutes!
