Cooking time ~40 minutes
This is super simple comfort food. The recipe is from my housemate and it's a staple dish for when we're feeling sorry for ourselves.
Ingredients:
375g Dried Penne
400g Chopped Tomatoes
1x White Onion
2x Carrots
3x Celery Sticks
1x Red Chilli
5tbsp Olive Oil
2tsp Marjoram
Parmesan to Serve
Method:
This is a super simple dish to make. Start by finely dicing Onions, Celery and Carrot. You want equal size and quantity of Carrot and Celery. Slice and de-seed the Chilli too.
Add to a saucepan with a glug of Oil, the Chopped Tomatoes and season with Salt and Pepper.
Bring the heat up and then simmer for around 30 minutes. You want the Veg to soften a bit but still hold some texture. The Veg should soak into the Tomatoes leaving a saucey consistency.
Take off the heat and blitz with a stick blender. If you don't have one, you should be able to whizz in a normal blender/juicer too.
Get the Pasta on to cook as per packet instructions. Penne works really well for this, as would Conchiglie. It's best to have a Pasta which will take in a lot of the sauce, as opposed to Spaghetti.
When the Pasta is nearly done, put the Sauce mixture back onto a low heat. Add 5tbsp of Olive Oil and 2 heaped tsp of Dried Marjoram. Stir well and heat up.
Add the Sauce to the drained Pasta and plate up. Serve with as much Parmesan as you like, and a crack of Black Pepper.
