Dishoom's Breakfast Naans

w/ Homemade Chilli Jam


Makes: 6

Cooking Time ~1 hour (including the Jam)


These Naans are inspired by the Dishoom cook book and are a seriously good way to start your weekend.


 



 

Ingredients


6x Pork Sausages

12x Rashers of Bacon (streaky)

12 Mini Naan Breads

100g Soft Cream Cheese

1tsp Curry Powder

Bunch of Fresh Coriander

1x Green Chilli (finely sliced and deseeded)

6x Medium Eggs


For the Chilli Jam


2x Sweet Red Peppers

3x Red Chillies

1x Chunk of Fresh Ginger

2x Garlic Cloves

100g Tinned Tomatoes

200g Caster Sugar

75ml Red Wine Vinegar


 

Method


Preheat your oven to 200ºc.


For the Chilli Jam, roughly slice the Peppers, Red Chillies, Ginger and Garlic and blitz with a stick blender until smooth. A normal blender/juicer will likely work just as well.


Once blended, add to a pan with the Sugar, Tomatoes and Red Wine Vinegar. Stir well and bring the mixture to a boil. When at a boil, skim off the top layer with a spoon and discard.


Bring the mixture down to a low simmer and leave for 45 minutes, stirring occasionally.


When the mixture has been simmering for about 30 minutes, put your Sausages in the oven and get the Bacon frying on a low heat with a touch of Oil and Butter.


The Chilli Jam should be a thick, lava-like consistency. When it's been simmering for 45 minutes, remove from the pan and transfer to a jar or bowl to cool slightly.


The Sausages should take about 20/25 minutes. Once they're done, remove them from the oven and slice them lengthways. Add these to the Bacon pan to continue frying on a low heat.


Heat another pan with Oil and Butter and fry your Eggs while you put the Naans in the oven to heat up as per cooking instructions.


When everything is cooked, plate up as follows:


Spread a layer of the Cream Cheese on one of the Mini Naans. I like to sprinkle 1/2 tsp of Curry Powder here. Top with some of the sliced Green Chilli and an Egg. Lay the Bacon and Sausages on top of that, and finish with some Fresh Coriander.


On the other Naan spread a layer of the Chilli Jam, and serve.
