Crispy Fried Chicken w/ Bacon Mash & Pea Guacamole

Serves: 1

Cooking time ~20 minutes


This tastes as good as it looks, does what it says on the tin and will not let you down. This is comfort on a plate and you should try it. It's also incredible simple. It HAS to be Panko I'm afraid - other breadcrumbs won't work as well. I serve this with lashings of Hot Sauce.


 


 

Ingredients:


1x Chicken Breast

1 Large Potato

100g Bacon Lardons

1x Avocado

Handful Panko Breadcrumbs

Flour

1x Egg

Chilli Flakes

100g Frozen Peas

1x Green Chilli

Fresh Coriander


 

Method:


Quarter your Potato and get it on to boil in a pan with boiling salted water. This should take about 15 minutes or so.


While that's cooking, get your breading station up and running. Get some Flour onto a plate and season well with Salt and Pepper. On another plate/bowl, whisk an Egg. On the third plate add your Panko breadcrumbs and season with Salt, Pepper and Chilli Flakes.


Carefully but forcefully hammer your Chicken breast flat with a rolling pin. Making it flat will mean it will fry evenly. Once you've done that, drop it in the Flour till well coated, then the Egg mixture followed by the Panko mix.


In a frying pan, fry the Bacon Lardons with a glug of oil until crispy.


Boil your Peas for a few minutes until cooked, then plunge them into cold water. Finely chop your Green Chilli.


Mash your Avocado well with some Salt, Pepper, the now cold Peas, finely chopped Coriander and the Chilli.


Get some vegetable oil in a large pan and get it nice and hot. Once it's hot, drop your Chicken Breast in. This will need about 4 minutes each side, until golden crispy. Careful it doesn't burn but make sure the Chicken is cooked all the way through.


The Potatoes should be ready now. Mash thoroughly with loads of Butter and a glug of Oil. Stir through the Lardons with a bit of their cooking oil.





That should be it! Plate up how you like. I like to add loads of Hot Sauce to this meal.
