w/ Sticky Jasmine Rice
Serves 3
Cooking time ~30 minutes
This is a super quick, super tasty recipe. You can freestyle the measurements and add more or less Soy Sauce depending on how you like your meat.
Ingredients:
500g Beef Mince
3x Garlic Cloves
6x Spring Onions
Chunk of Fresh Ginger
1x Red Chilli
Fresh Coriander
1x Cucumber
1x Lime
Sesame Seeds
½ Cup Soy Sauce
1tbsp Honey
3tbsp Rice Wine Vinegar
1tbsp Brown Sugar
300g Jasmine Rice
Method:
Start by finely slicing your Garlic, Spring Onions, Red Chilli and Ginger. Half your Lime and chop your Fresh Coriander too.
Lightly toast your Sesame Seeds in a dry pan, making sure to keep an eye on them before they start to burn. Keep these to one side when done.
Chop your Cucumber into bitesize chunks. It's best to scrape out the inner mushy part with a teaspoon so you're left with nice crunchy pieces. Add some Caster Sugar, Salt, the juice of half the Lime and your Sesame Seeds into a bowl with the Cucumber and mix well. Pop some cling film over the top and leave it in the fridge.
Get your Rice on to cook as per packet instructions.
Next for the Beef - start by frying it off in a pan with some Sesame Oil. Fry until its started to brown completely and you've cooked away some of the liquid that has been released.
While it's browning, mix your Soy Sauce, Rice Wine Vinegar, Brown Sugar, Honey, Garlic and Ginger in a bowl. I added some Teriyaki Sauce too for extra stickiness as I had some lying around.
Once the Beef is browned off, add the Sauce and half of the Spring Onions. Add a splash of Water to loosen the mixture if needed and fry off on a medium/high heat.
Keep frying until you get to a colour / texture that you like. Add a little more Soy Sauce if needed.
Once you've reached the right texture, it's time to plate up!
Add the Beef to a bowl with some Rice and top with Fresh Coriander, Spring Onions and the Cucumber mixture.
