Crab & Truffle Cacio e Pepe

Serves: 4

Cooking time ~15 minutes


This recipe comes from guest contributor Harry Little and it's quick, easy, luxurious and delicious in equal measures.


 


 

Ingredients:


400g Spaghetti/Tagliatelle (dried)

150g Parmesan

60g Butter

200g White Crabmeat

4tsp Crushed Black Peppercorns

2tbsp Truffle Oil


 

Method:


Get your Pasta on to boil in a pan of heavily salted water. Boil until it's starting to become al dente. You'll want this to be a couple of minutes off of the packet instructions.


Reserve a cup or two of the Pasta water during the cooking process.


While the Pasta is cooking, in a bowl, add the Butter and Parmesan and mix together well. Add some of the Pasta water gradually and keep mixing together until you have a nice sauce-like consistency.


Drain your Pasta when cooked and immediately add it to the Sauce. Toss in the Crabmeat and Black Pepper and mix well. Add the Truffle Oil to taste (you may want less).


Divide into bowls and top with more Black Pepper and Cheese as you see fit.
